So, how do you make an Apple Crumble pie better? How about if you add caramel and make it an caramel apple pie!
Here's what you are going to need:
For the filling:
3 pounds of Granny Smith apples (about 6 medium apples), peeled, cored and thinly sliced
1 cup sugar
1/2 cup (1 stick) butter
2 Tablespoon cornstarch dissolved in 1 tablespoon water
1 1/2 teaspoon cinnamon
1 teaspoon nutmeg
For the caramel sauce:
2 cans (14 ounces each) of sweetened condensed milk (not evaporated milk)
For the Crumble Topping:
1/2 cup quick cooking oats
1/2 cup flour
1/4 tsp salt
1 cup brown sugar
1/2 cup COLD butter
1/2 of Flaky Pie Crust Recipe, or you can use an unbaked store bought pie crust.
Here's what you need to do:
Prepare pie crust. For this recipe, I like to fold the ends of the crust under instead of cutting them off so that the sides of the pie are higher to hold all of those wonderful pie ingredients! Set aside. Heat oven to 375° F.
Melt butter in a large skillet over medium heat until foamy.
Add 1 cup of sugar.
Cook and stir until mixture begins to brown, about 2 minutes.
Add the apples. Cook until the apples until they are slightly soft, give up their juices and the liquid becomes syrupy again.
Mix together the cornstarch and water. Add to the apples.
Remove from heat. Add the cinnamon and nutmeg.
Mix well. Set aside and allow to cool.
Place sweetened condensed milk in a LARGE microwave-safe bowl. You will need at least a 3 quart bowl.
Cook on MEDIUM (50%) power for 4 minutes, stirring halfway through heating time.
Reduce power to MEDIUM-LOW (30%) power; cook for 8 to 12 minutes, stirring with wire whisk every few minutes, until thick and light caramel-colored. It will more than double in volume so make sure you use a LARGE bowl.
This is what it should look like. Set aside.
Place pie crust on a baking sheet to catch any spills as the pie cooks. Spoon the apples into the crust.
Spread the caramel sauce over the apples. Set aside.
Mix together the oats, flour, salt and brown sugar in a medium bowl.
Cut the ½ cup of COLD butter into small pieces.
Add the butter to the oat/flour/salt/brown sugar mixture.
Use a whisk, pastry blender, fork or 2 knives to cut the butter in until it resembles coasre crumbs.
Sprinkle the crumble topping evenly over the pie.
Cover edges of pie with foil to keep from browning too quickly. Bake in the preheated 375° F. oven for 25 minutes. Remove foil and continue baking for another 30 to 35 minutes until topping begins to brown. I hope you enjoy this Caramel Apple Crumble Pie Recipe as much as we did!
