Broccoli Cheese Soup Recipe

So simple yet oh so good, this broccoli cheese soup recipe is wonderful with a meal or as a meal!



I love to serve this soup for lunch with a BLT or a turkey club sandwich. The only problem is you'll be so satisfied that you'll want to take a nice nap.

Here's what you are going to need:
1/2 cup of butter
1/2 cup of flour
4 cups of chicken broth
3 1/2 cups of milk
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of cayenne pepper
5 cups of broccoli florets, cooked
3/4 pound of Velveeta Cheese
2 cups of shredded cheddar cheese

Here's what you need to do:

In a large stock pot over medium heat, melt the butter. Stir in the flour and cook, stirring constantly for 2 to 3 minutes.

Add the chicken broth, the milk, salt, pepper and cayenne pepper. Bring to a boil, reduce heat to low and simmer about 10 minutes.

Add the cheeses and stir until melted. Stir in the broccoli and continue to cook for another 5 minutes.
