Broccoli Cheese Soup

Hi Mama,
In your broccoli cheese soup recipe I was wondering if there was any other cheese that could be used instead of the velveeta cheese...?

Hi Sian!

You could probably just use cheddar cheese but it would change the recipe and affect the taste and the texture of the soup. If you chose to use cheddar, I'm not sure what amount to use. You would have to judge the amount by taste. I recommend the Velveeta because it makes the soup nice and creamy.
