So simple yet oh so good, this brocolli cheese soup recipe is wonderful with a meal or as a meal!
3/4 cup of butter
3/4 cup of flour
5 1/2 cups (3- 14.5 ounce cans) of chicken broth
4 1/2 cups of milk
3/4 teaspoon of salt
3/4 teaspoon of pepper
1/4 teaspoon of cayenne pepper
5 cups of brocolli forets, cooked
3/4 pound of velveeta cheese
3 cups of shredded cheddar cheese
In a large stock pot over medium heat, melt the butter. Stir in the flour and cook, stirring constantly for 2 to 3 minutes.
Add the chicken broth, the milk, salt, pepper and cayenne pepper. Bring to a boil, reduce heat to low and simmer about 10 minutes.
Add the cheeses and stir until melted. Stir in the brocolli and continue to cook for another 5 minutes.
