Mama's Homemade Chicken Soup Recipe



You don't have to be under the weather to enjoy Mama's chicken soup recipe.



This soup is a family favorite! You can make it with either egg noodles or rice, either way, you'll enjoy this homemade chicken soup.




4 boneless, skinless chicken breasts, cut into bite sized pieces
10 cups homemade chicken broth or 5 cans of chicken broth
1 cup of celery, cut cross ways
1 cup of carrots, cut cross ways
1 small sweet onion, diced
2 cloves of garlic, finely diced
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon poultry seasoning
1/2 teaspoon pepper
1 tablespoon dried parsley
6 ounces of uncooked egg noodles or 1 cup of uncooked white rice
1/2 cup of cornstarch
1/2 cup of cold water

In a large pot, saute' celery, carrots, onion and garlic in olive oil for about 10 minutes.

Add cut up chicken, chicken broth, salt, pepper and poultry seasoning. Bring to a boil and cook for 10 minutes.

Add uncooked egg noodles or rice, cover and cook until noodles or rice is done ( about 15-20 minutes)

Mix 1/2 cup cornstarch with 1/2 cup cold water. Add to pot and stir. Bring to a boil and cook for 1 minute.
