Cucumber Salad with Onion and Tomatoes



There's nothing quite as refreshing on a hot summer day than a nice cucumber salad with onion and tomato. This light salad makes a great side dish with just about any meal. It also makes a great snack.



If all you have are regular tomatoes, that's fine, just dice some of those up or cut them in wedges. You can adjust the amount of cucumbers, onions and tomatoes in this salad to suit your personal taste.

Here's what you are going to need:

2 cucumbers (about 1 pound), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, thinly sliced
1 1/4 cups water
1/2 cup of Apple Cider Vinegar
2 Tablespoons Olive Oil
1/4 cup sugar
2 Tablespoons chopped fresh parsley
Salt and Pepper to taste


Here's what you need to do:

In a large bowl, whisk together the water, apple cider vinegar, olive oil, sugar and parsley. Add the cucumbers, cherry tomatoes and vidalia onion. Sprinkle with salt and pepper to taste. Mix everything together. I doesn't get any easier than that.

You can let this sit in the refrigerator for an hour or so before enjoying it or you can do like I do....I like to let the cucumber, onion and tomato salad sit in the refrigerator in a mason jar for at least a day or so to let all of those wonderful flavors come alive.

When I was growing up, my Mama would make a version of this salad without the tomatoes. I'm not really sure why she left out the tomatoes but I like it much better with them.So, if you are looking for an easy to make and delicious summer salad with lots of crunch, try this light and refreshing cucumber salad. It's great on a hot summer day!
