Eggs In A Basket

Eggs in a basket are fun to make and fun to eat. You can even get creative with them around the holidays by using cookie cutters to make eggs in a tree or eggs in a heart.



Don't forget to grill the center cut out of the bread too so you'll have something to sop up the yellow!

Here's what you are going to need:


For each serving:
2 eggs
2 slices of sourdough or whole grain bread. It works best with the wide slices of bread
Non-stick Cooking spray. I prefer the butter flavor. (Or, you can just butter the bread or the grill and lay the bread down on it.)


Here's what you need to do:

Heat a non-stick skillet or pan over medium to medium low heat.

Use a biscuit or cookie cutter to cut the center out of each slice of bread.

Note: If you are going to butter your bread, it works best to butter it before you cut out the center.

Spray each slice of bread, as well as the centers with cooking spray. Place the sprayed side down on the non-stick pan. Grill the bread until it begins to brown. Turn the heat down to medium low to low. Flip, and carefully break an egg into the center of each hole. Spray the second side of the bread with the egg, as well as the center piece, with non-stick spray.

When the white is at least halfway cooked, flip and continue cooking (Don't forget to flip the center cutouts as well). Use your finger to gently poke the white of the egg to see check to see if it's done.

Serve with your favorite breakfast items. This is also great with sausage gravy.
