Ham and Cheese Sandwich with Asparagus

Add asparagus and thousand island dressing to a ham and cheese sandwich and you've got a real treat.

ham and cheese sandwich

Here’s what you are going to need:

8 Fresh Asparagus Spears (I don’t recommend you use canned)
2 tablespoons of butter
1 large clove of garlic
Lemon Pepper seasoning
2 slices of sour dough bread
1/2 of a thin slice of country ham
2 slices of provolone cheese
3 rings of Vidalia onion, or other sweet onion
2 tablespoons of Thousand Island Dressing

Here’s what you need to do:

Heat a pot of water to boiling.

Snap the woody ends off of the asparagus spears.
Add the asparagus spears and and cook for 1 to 2 minutes.

Remove from boiling water and place into ice water. Set aside.

Brown the country ham in a medium skillet. Cut in half and set aside.

Add 1 tablespoon of the butter along with the clove of garlic that has been mashed.

Add the Asparagus spears to the pan and sprinkle with Lemon Pepper Seasoning.
Sauté until tender but crisp, 3 to 4 minutes.
Remove from pan (do not remove butter). Set aside.

Lay the 2 slices of sour dough in the pan and brown. Flip over.

Add the other tablespoon of butter to the pan to brown the other side.

Lay 1 slice of provolone cheese on each slice of bread.
Add the slice of country ham to one side of the bread and the asparagus spears to the other.

When the bread has browned, remove from pan.
Add the three slice of onion.

Add the thousand island dressing.

Put the sandwich together and ENJOY!
