Homestyle Potato Salad Recipe



No picnic menu would be complete without Mama's homestyle potato salad recipe. You won't be disappointed.




6 to 8 medium potatoes, cubed into bite size pieces
1 tablespoon salt (for boiling potatoes)
1/2 cup grated carrot
1/2 cup finely diced green pepper
1/2 cup finely diced celery
1/4 cup sweet onion, finely diced
3 hard boiled eggs ,finely diced
2 cups of mayonaise
2 tablespoon vinegar
1/4 cup sugar
2 tablespoon Guldens Spicy Brown Mustard
2 teaspoon salt
1/2 teaspoon pepper
paprika for sprinkling on top

Peel and cube potatoes. Put potatoes into a large pot and cover with cold water. Add a tablespoon of salt. Bring to a boil, cover and recuce heat to medium low boiling gently until fork tender. Drain and set aside.

In a large bowl, mix together all ingredients except potatoes and paprika.

Fold in warm potatoes and refrigerate. Sprinkle with paprika before serving.
