How To Make Lasagna

Learning how to make lasagna from scratch isn't hard if you follow this homemade lasagna recipe from Mama!



Yea...I know...there nothing southern about lasagna but my kids would never forgive me if I didn't include my lasagna recipe here so although it may not be southern, it sure is good!

For The Sauce:


1 pound Mild Italian Sausage
3/4 pound of lean ground beef
1/2 cup of onion, finely chopped
3 cloves of garlic, finely chopped
1 can (28 ounces) crushed tomatoes
2 cans (6 ounces each) of tomato paste
1 can (15 ounces) of tomato sauce
1/2 cup of water
2 tablespoons of sugar
2 teaspoons of dried basil
1/2 teaspoon of fennel seeds
2 teaspoons of Italian Seasoning
1 teaspoon of salt
1/4 teaspoon of pepper
2 tablespoons of dried parsley


For The Filling:


4 cups of ricotta cheese, or small curd cottage cheese
2 eggs
2 tablespoons of parsley
4 cups of mozzarella cheese, shredded
1 1/2 cups of Parmesan cheese
12 lasagna noodles


Here's what you need to do:


In a Dutch Oven, brown the sausage, ground beef, onion and garlic. Drain.


Add the crushed tomatoes, sauce, paste, and the water.


Stir until well blended.


Add the Basil, Fennel Seeds, Italian Seasoning, Salt, Pepper, 2 tablespoons of Parsley and the sugar.


Stir until well blended. Cover and cook for at least 45 minutes but if you have the time, cook it for 2 to 2 1/2 hours, it will be even better.

Bring a large pot of lightly salted water to a boil. Remove from heat and add the lasagna noodles. Allow the noodles to sit in the water for a few minutes before using.


Preheat oven to 350 degrees F.



In a bowl, mix together the ricotta cheese, eggs and 2 tablespoons of parsley.



Mix in the Parmesan cheese. Set aside.




In a 15 x 10 x 2 baking dish, pour 2 cups of sauce and spread over the bottom of the baking dish.



Arrange 4 lasagna noodles on top of the sauce,



Spread half of the ricotta mixture on top of the noodles.



Sprinkle with 1 1/2 cups of the mozzarella cheese.



Spread 2 more cups of the sauce on top of the cheeses,




Add another layer of 4 noodles,



Spread the other half of the ricotta on top,



Sprinkle with the another 1 1/2 cups of the mozzarella cheese




Add another layer of 4 noodles.

Sprinkle with the another 1 1/2 cups of the mozzarella cheese.



Top with 2 more cups of sauce. Sprinkle with the remaining 1 cup of mozzarella cheese.

Cover with tin foil and bake for 25 minutes. Uncover and bake for another 20 minutes. Allow to sit for 20 minutes before serving.
