Recipe for Vegetable Soup



Vegetable soup is great anytime of year and I have a recipe for vegetable soup that will have you and your whole family going back for more.

If you find yourself with a small amount of leftover vegetables from dinner, throw them into a quart sized Ziploc freezer bag, make sure that you get out as much as the air as possible to cut down on ice crystals and throw them into the freezer. Just keep adding to it and when it get pretty full, make your homemade vegetable soup.

Here's what you are going to need:


2 tablespoons vegetable oil
1 pound of beef tips (stew meat works just as well)
2 cans (14.5 ounce) of stewed tomatoes -you can also use canned whole tomatoes
3 cans (14.5 ounce) beef broth
1 (15 ounce) can tomato sauce
1 teaspoon of onion powder
1 teaspoon of garlic powder
2 pounds frozen vegetables
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons of Italian seasoning

Here's what you're going to need:

In a large, 8 quart pot, brown the beef in the vegetable oil.

Add the tomatoes, beef broth, tomato sauce, onion powder and garlic powder. Bring to a boil, reduce heat, cover and simmer for 1 hour.

Add the vegetables (no need to thaw), salt and pepper. bring to a boil again, reduce heat, cover and simmer another hour.

During the last 10 minutes of cooking, add the Italian seasoning.
