Recipe for Zucchini and Tomatoes

Here's a simple low calorie, low fat recipe for zucchini and tomatoes that your whole family is gonna love!



There's only 74 calories and 3.7 grams of fat per serving so you don't have to feel guilty about enjoying this delicious side dish!

zucchini and tomatoes



Here's what you're going to need:


1 tablespoon of Olive Oil
1/3 cup of finely chopped onion
1 teaspoon (1 clove) of chopped garlic
2 cups (approx.) of chopped zucchini
1 can (15 ounce) of diced tomatoes
1/4 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon of dried basil
1/4 cup of grated Parmesan cheese


Here's what you need to do:



In a large pan, combine the olive oil, chopped onion and garlic.



Cook over medium low heat 3 to 4 minutes until onions begin to turn clear.


Chop two cups of zucchini. If you go over the two cups that's fine because zucchini is low in calories (1/2 cup of chopped zucchini only has about 10 calories) and has no fat.



Add the zucchini.



Stir in the canned tomatoes, salt and pepper.



Cover and cook over medium low heat 10 to 15 minutes or until zucchini is fork tender.



Remove from heat, add the parmesan cheese and dried basil.



Stir well and enjoy!
