Hey there Sian!

Hoecakes, johnny cakes or corn fritters are all the same. Basically they are corn bread that has been thinned down and cooked on a hot griddle. Hoecakes got their name because back in the day, while out in the cotton fields, they would often use a garden hoe or a shovel held over an open fire to cook them since they didn't have access to a kitchen.

So, just click on the link to my cornbread recipe and add a little extra milk to thin it down to the consistency of pancake batter Then, just cook them in a skillet or hot griddle just like you would a pancake.
