Mama's Roast Beef Recipe

roast beef and gravy



You can adjust the cooking time to make this same roast beef recipe in either the crockpot or a pressure cooker and either way it will be fork tender and delicious!


5-6 pound beef chuck roast
2 tablespoons olive oil
1 envelope Lipton Beefy Onion Soup Mix
3 cloves of garlic
2 cups homemade beef broth , or 1 can beef broth
1/4 teaspoon pepper


For the gravy

1/2 cup cornstarch
1/2 cup cold water

Cut each clove of garlic in half. Cut 6 slits 1/2 inch deep into the roast and place 1/2 clove of grlic in each slit. Brown the beef on both sides in a saucepan with 2 tablespoons of olive oil over medium high heat.

Pour the beef broth in the bottom of a crockpot or pressure cooker. Put the browned beef into the pot and sprinkle the top with the Lipton Beefy Onion Soup Mix and pepper.


Cover and cook:
Crockpot: 8-10 hours on low heat
Pressure Cooker: 1 hour after pot comes up to pressure.


For the gravy:

Skim the fat from the broth. Pour the broth into a saucepan and bring to a boil. In a cup, mix together 1/2 cup of cornstarch and 1/2 cup of COLD water. Stir broth while slowly adding cornstarch mixture a little at a time until gravy reaches the desired consistency. Boil and stir 1 minute.
