Soft Chocolate Chip Cookies

The key to these great tasting soft chocolate chip cookies is the vanilla pudding. Reheat them in the microwave for a few seconds and they'll taste just like when they came out of the oven!

Here's what you'll need:

2 1/4 cups of all-purpose flour
1 teaspoon of baking soda
1 cup butter, softened
3/4 cup packed light brown sugar
1/4 cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
1 teaspoon vanilla extract
2 eggs
1 package(12 ounces) semisweet (or dark chocolate) chocolate chips

Here's what you'll need to do:

Preheat oven to 375 degrees F.

In a medium bowl, combine the flour and baking soda. Set aside.

In a large mixing bowl, combine the softened butter, sugar, brown sugar, pudding mix and vanilla extract.

Mix well.

Add eggs, one at at a time, mixing well after each egg.

Gradually add the flour. Mix well.

Add the chocolate chips.

Stir with a rubber spatula until well mixed.

Drop by rounded spoonful onto baking sheet making sure that each cookie is about the same size.

Bake at 375 degrees F. for 8 to 10 minutes.

Cool on a wire rack. Makes about 3 dozen nice size cookies.

Pour a big glass of ice cold milk and enjoy these wonderfully chewy and soft chocolate chip cookies!
