Southern Tomato Gravy

Tomato Gravy has been served on southern tables for generations. It's great served over biscuits for breakfast or rice for lunch or supper.

Here's what you'll need:


4 slices of bacon
1 small onion
4 to 5 tablespoons of flour
1 (15-ounce) can of tomato sauce
1 to 1 1/2 cups of half and half
Salt and Pepper to taste.


Here's what you need to do:



Cook the bacon over medium heat until crisp. Remove to paper towels to drain. Set aside.




Saute the diced onions in the bacon grease about 5 minutes until soft.




Add the flour. Stir and cook just long enough to get the flour taste out. About 2 minutes.




Add 1 cup of the half-and-half. Cook and stir until mixture begins to thicken.




Stir in the tomato sauce.





Season with salt and pepper to taste.




Bring to a boil. Add more half-and-half if desired. Pour over biscuits or rice and top with crumbled bacon.
