Can you think of a better way to start
the day than with Mocha Chocolate Chip Muffins?
I was given a sample of some wonderful cold brewed coffee from the folks at Icebox coffee. I developed this mocha chocolate chip muffin recipe using their concentrated coffee. The concentrate is very strong and not in the least bit bitter....on the contrary, it is a very smooth coffee. You may be able to substitute very strong coffee for the concentrate and it will probably work fine but I can't guarantee the results will be as wonderful as if you use their product.
1 1/2 cup All Purpose flour
1/2 cup Whole Wheat flour
1 cup light brown sugar
1/3 cup unsweetened cocoa powder
2 1/2 tsp baking powder
1/2 tsp. salt
1/2 cup canola oil
1 cup of milk
2 tsp vanilla
1/4 cup (2-ounces) Icebox cold brew coffee concentrate (do not dilute)
1 cup of semi sweet chocolate chips
Preheat oven to 350° F. Line 12 jumbo or 24 regular size muffin tins with cupcake liners.
In a medium bowl, combine the All-purpose flour, whole wheat flour, brown sugar, unsweetened cocoa powder, baking powder and salt.
Mix until well combined.
Add the chocolate chips.
Mix well. Set aside.
In another bowl, combine the
canola oil, eggs, milk, vanilla and Icebox cold brew coffee
concentrate. Whisk until well combined.
Add the wet ingredients to the dry ingredients.
Stir just until combined. Do not over mix or your muffins will be tough and you want a nice tender muffin.
Fill muffin cups 1/2 full.
Bake until a toothpick inserted in the center comes out clean.
15-20 minutes for regular muffins
20-25 for jumbo muffins.
Remove from oven and cool on a wire rack if you can wait that long LOL.
