Recipe For Baked Potatoes



If you're looking for a real treat, Mama's recipe for baked potatoes is loaded with all kinds of flavor in every bite!

In the summertime, to keep the kitchen cool, I like to bake these in the microwave and then after they are stuffed, finish them on the grill instead of the oven! It gives them a wonderful summertime grill flavor.

Here's what you are going to need:


4 large baking potatoes
1/4 cup butter (1/2 stick), melted
1 1/2 cup shredded Colby/Monterrey Jack cheese
8 slices bacon
1 1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon chives

Here's what you need to do:

Preheat oven to 375 degrees F.

Bake potatoes on a baking sheet for 1 hour or until soft.*(See note at bottom)

While the potatoes are baking, cut the bacon into small pieces. Brown in a skillet until crisp. Drain on paper towels. Set aside.

When the potatoes finish cooking, allow them to cool for about 10 minutes before handling. Cut potatoes in half lengthwise and scoop out the inside into a bowl leaving about 1/4-inch of potato inside the skin so that the potatoes maintains its shape.

Mash the "meat" of the potato and add the melted butter and 1 cup of the cheese. Mix well. Add the bacon, sour cream, salt, pepper and chives. Mix well.

Stuff the mixture back into the potato skins and top with the remaining 1/2 cup of cheese.

Return to oven and bake another 15 minutes until cheese is melted.

*You can cook your potatoes in a microwave if you want. To cook in the microwave: Microwave on high power, uncovered, for about 10 minutes. Turn the potatoes over and rearrange them after 5 minutes. Once the potatoes have been stuffed, microwave on high for about 3 minutes until cheese is melted.
