Spiced sweet potato casserole

Ingredients

1can (15 1/2 ounces) crushed pineapple
4cups mashed sweet potatoes
1/4 c. Sugar
2Tbls.butter
1Tbls. Vanilla extract
2tsp. Pumpkin pie spice
1/2 c packed brown sugar
1/4 c (2 sticks) butter
1/2 c pecans or walnuts


1)Preheat oven to 350. Drain pineapple reserving 1/4 c juice. Mix reserve juice with sweet taters,granulated sugar, 2Tbls. Butter, vanilla and 1 tsp. of pumpkin spice or cinnamon. Pour into slightly greased 2-quart baking dish. Top with crushed pineapple.

2) mix brown sugar, 1/4 c butter and 1tsp pumpkin pie spice in a sauce pan. Cook over medium heat until sugar dissolves. Stir in nuts. Spoon over sweet taters and pineapple mixture. Bake 35 to 40 minutes until lightly browned and heated through.
