how would you make fried tilapia? and what sides would you serve with it?

With what kind of seasonings, and flavors

Tilapia is a mild white fish that cooks quickly. I would use a light breading because you don't want to overpower it's mild taste.

To pan fry, make a breading using 1/2 cup of cornmeal mixed with 1 Tablespoon of Old Bay Seasoning for every 2 to 3 fillets. Dip the fillets in a little milk and then dredge in the cornmeal. Heat about 1/4 cup of vegetable or canola oil in a 10 to 12 inch skillet over medium to medium high heat until it begins to show ripples. Gently lay a couple of breaded filets in the pan and cook until golden brown. Flip and brown the other side. Drain on paper towels. These will only take a few minutes to cook. The fish should be flaky.

As for the sides, french fries and cole slaw are probably the most popular side dishes with fried fish. Other great sides would be baked or oven roasted potatoes, green beans, a nice side salad or broccoli.

These fried filets also make wonderful poboys! Slather a nice crust french or Italian bread with a little tartar sauce with lettuce, tomato and maybe a little cheddar cheese and....oh my....all I can say is YUM!!!!!
