chicken and dressing

by Patricia Broughton
(Millington, Tennessee)

One pan of cooked corn bread that was cooked in iron skillet.

One whole chicken boiled and removed the bone (do not discard the broth)

One small onion chopped

Two or three sprigs of celery chopped

Season to taste with poultry seasoning, salt, pepper

Break up corn bread in bowl combine other ingredients. Add enough broth to make slightly moist dressing. Remember you are going to bake this so have enough broth to keep from drying out while baking.

Take a greased casserole dish add some of the corn bread mixture spread around add chopped chicken. Pour rest of dressing mixture over chicken.

Place in a 350 degree oven and bake for 30 to 40 min. Check to see if starting to brown on top if so remove and that it and will make you slap your granny.
