Salmon Croquette Recipe

This easy salmon croquette recipe (salmon patties) makes a quick and delicious dinner.

Even with the price of canned salmon rising, this meal is still a very economical, great tasting meal whether you are on a budget or not.

salmon patties

Here's what you are going to need:

2 (14-ounce) cans salmon, drained and cleaned
1 spring (green) onion, chopped
1/2 cup celery, finely chopped
1/4 teaspoon garlic powder
1/2 teaspoon pepper
14 club crackers, crushed
1 teaspoon Old Bay seasoning
2 eggs, slightly beaten
A couple of dashes of hot sauce
2 tablespoons olive oil
2 tablespoons olive oil

Here's what you need to do:

In a large frying pan over medium high heat, heat butter and olive oil.

In a medium bowl, combine salmon (that has been picked free of the round bones, skin and lateral line) with the onions, celery, garlic powder, Old Bay Seasoning, cracker crumbs, hot sauce and eggs. Mix well.

Form into small patties and fry until golden brown, turning once. Drain on paper towels.
